Cauliflower Rice

This ‘rice’ may be microwaved, steamed, or served raw.
1 large head of organic cauliflower
Olive oil, to taste
Salt and pepper, to taste
Ground nutmeg, to taste
1. Core the cauliflower and cut into pieces that will fit through the feed tube of a food processor.
2. Process the cauliflower pieces into rice-sized bits, then put the ‘rice’ into a microwavable bowl and cook for 3-5 minutes on high until it’s just tender but retains some firmness.
3. Sprinkle with a bit of olive oil if desired, season with salt and pepper and a touch of nutmeg to taste, and serve.
This dish is the perfect substitute for rice, especially for people on a low glycemic diet and it works for any recipe that calls for pre-cooked rice.
